¼ cup fine bulgar cracked wheat, cooked & cooled
3 cups parsley, finely chopped, stems discarded
2 medium tomatoes, diced
1 cucumber, diced
¼ cup fresh mint, chopped
4 tbsp lemon juice
½ tsp salt

Cook fine bulgar cracked wheat according to package directions.

Chop and prepare parsley, tomatoes, cucumber and mint. Combine with the bulgar cracked wheat.

Add remaining ingredients and mix thoroughly

Serve in a big bowl on a bed of lettuce
