Mix softened butter, brown sugar, egg and molasses until combined.
Sift together the dry ingredients (flour, soda, spices) and stir into the molasses mixture.
Chill the dough for 20 minutes, or until hard.
Preheat the oven to 375F.
Roll the dough into balls and dip the tops in sugar, then water.
Place on a baking sheet, tops up, and bake for 10-12 minutes or until set in the middle.
Remove from oven and tap on the counter to create cracks in the cookies.
Enjoy with a glass of milk.
